Baked Apple Terrine with Cranberries on Vanilla Yogurt

Instructions:

Preparation (approx. 35 min) Peel apples, remove core, cut into cubes of approx. 1.5 cm. Roast in a little hot rapeseed oil with a small amount of powdered sugar until golden, caramelize and cool. Cut the mint into strips. Coarsely chop the pistachios.

Soak the gelatine in cold water, then squeeze it well and let it warmly melt with a tablespoon of apple juice.

Rinse the baking dish with cold water and cover with cling film.

Mix the cream cheese with honey, whipped cream, curd cheese, juice of one lemon, cinnamon, pistachios, apple juice and cranberries and cooled apples well.

Next, fold in the gelatine and fill the amount into the tureen, tap a little, close the foil and leave to cool in the refrigerator for about four to five hours, or preferably overnight.

Stir vanilla yogurt until smooth, pour as a mirror on flat plate.

Turn out the terrine, remove the foil and cut into slices.

Place the terrine in the center of the mirror, sprinkle mint strips with the pomegranate seeds around the outside.

Our tip: If you like to cook with fresh herbs, it is best to get kitchen herbs in pots – that way you always have everything at hand!
