For baked chicken knuckles first put the eggs in a bowl or soup plate, salt a little, whisk until yolk and yolk are combined. Prepare 2 more bowls, fill one with flour, the other with the breadcrumbs.

Depending on your taste, peel the skin off the lower legs or leave them as they are. Salt the knuckles a bit, then put them into the bowl with flour and turn them over, then pull them through the beaten eggs and finally coat them with the breadcrumbs.

Now put the breaded knuckles into the hot clarified butter at about 160 degrees (depending on the pan, choose the quantity so that they float in it) and bake them for about 15 minutes until they have a golden brown color. Serve the baked chicken knuckles.
