Instructions:

For baked coconut bananas with coconut caramel, first peel the bananas, cut them in half lengthwise and possibly widthwise. First roll them in the cornstarch, then pull them through the beaten egg and finally coat them in the coconut flakes.

Fry in hot fat at approx. 180 °C until golden brown and drain on kitchen paper.

Caramelize sugar (not too dark), pour in coconut milk, boil down and pass through a sieve if necessary.

Arrange bananas on banana leaves and drizzle with the caramel. Serve the rest of the sauce separately with the baked coconut bananas with coconut caramel.
