Baked Eggplant From the Hot Air Fryer

Instructions:

First, peel and finely dice the onion and garlic.

Wash the tomatoes and also cut into cubes, drain the mozzarella and cut into slices.

Heat the oil and fry the onion and garlic in it. Add the tomatoes and cook for about a quarter of an hour. Season with the herb mixture, salt and pepper.

Wash the eggplant and cut it into slices about 1 cm thick. Put them on the griddle or in the baking dish. Put some tomato sauce and a slice of mozzarella on each.

Bake in the Philips Airfryer hot air fryer at 180 °C for about 20 minutes.

Serve the baked eggplant garnished with basil.
