Pasta dishes are always a good idea!

Make a seasoning mix for the goose. To do this, mix all the seasoning ingredients, season the goose with it and place on an oven rack. Underneath, slide a deep tray (fat pan), in which onions, the remaining vegetables, orange and liquid are mixed. Bake the geese at 160 degrees for about 1 hour with hot air.

After the baking time, pour the resulting sauce from the deep tray through a hair sieve into a saucepan and let it bubble. Skim off half of the fat with a ladle. Then mix cornmeal with orange juice, pour into the boiling sauce and make 3-4 min. Finally season with cranberries, mustard and maybe other seasoning ingredients.

Sauté or steam the cabbage as well as the carrots with a little water and then season with butter and the seasoning ingredients. Toss the Schupfnudeln in butter and season with herb salt.

Finally, arrange the vegetables, cut open the goose breast or leg, pour the sauce over it and serve with the Schupfnudeln.
