Instructions:

Preheat the oven to 180 °C.

Put Fleckerln in plenty of boiling salted water and cook until crisp (6-8 minutes), strain, drain.

In the meantime, cream butter, gradually add yolks, season with salt, pepper and nutmeg.

Cut ham into cubes (about 1/2 cm), add to butter-yolk mixture with drained Fleckerln.

Mix in sour cream.

Beat egg whites until stiff, fold into pasta.

Butter a baking dish and sprinkle with breadcrumbs.

Pour pasta into the dish, smooth out and bake in the oven for about 45 minutes (the surface should be crispy-brown).

Divide baked ham fritters into portions and serve with green salad.
