For the banana slices, mix the yolks, powdered sugar and water until creamy. Beat the egg whites until firm and carefully fold into the yolk mixture together with the flour and chocolate.

Lay out baking paper on a baking tray, spread the dough about 2 cm thick and bake for 10 – 15 minutes at 180 °C (preheat).

After baking, immediately turn out onto a tea towel sprinkled with a little powdered sugar. Remove the baking paper.

For the cream, prepare the vanilla pudding according to the cooking instructions and let it cool, stirring occasionally.

Add vegetable fat, this will make the cream extra smooth. Cream the margarine with the powdered sugar and vanilla sugar.

Stir into the pudding by the spoonful. Season to taste with a little rum. Spread half of the vanilla cream on the cooled sponge cake.

Slice the bananas, sprinkle with a little lemon juice and spread on the cream, then pour the remaining cream on top.

Cut the cake into pieces. Melt the couverture in a water bath, add the vegetable fat (provides shine). Pour the melted couverture over the cake pieces and let cool.

Garnish the banana slices with sliced bananas and chopped walnuts.
