Pour the pork rind in about 2 liters of boiling water, then dab and score it crosswise. Season the pork roast with salt and pepper and brown it in oil on all sides in a roasting pan. Put the roaster in the preheated oven and cook at 200 °C for about 75 minutes in the open cooking pot. After 30 minutes, add the coarsely chopped root vegetables, onion and caraway seeds. Baste the roast regularly with a little beer. In the last 5-10 min. turn on the broiler for a short time.

Before serving, remove the meat and rest it briefly on a wooden board. Dissolve the roast stock with water, bring to a boil and perhaps strain and degrease. Cut the roast pork and bring to the table with the sauce. It goes well with dumplings.
