A delicious mushroom dish for any occasion!

In a saucepan, heat vinegar and sugar gently and boil until reduced by half. Clean, rinse and pluck arugula smaller. Dry the fillets. Clean oyster mushrooms, perhaps rinse.

Heat 1 tsp oil in a large frying pan. Sear fillet slices over high heat for about 1 minute on each side. Season with salt and pepper. Remove.

Heat 1 tsp oil in the frying fat. Sauté oyster mushrooms in it until hearty. Season. Stir in arugula briefly and arrange with fillet slices. Drizzle with marinade. Grate Parmesan on top. Garnish with thyme.

Oyster mushrooms …grow contiguously and are grown on straw bales. Depending on the variety, they are grayish-brown or possibly whitish-brown. They should be firm when purchased and not torn at the edges or possibly too curled. Before preparing the mushrooms are dissolved from each other and carefully rubbed with kitchen roll. Thick stem ends are tough, so it is better to cut them into small pieces.

Oyster mushrooms contain easily digestible egg white, valuable iron and sufficient B vitamins for the skin. And that with just 12 calories per 100 g!
