Have fun preparing this mushroom dish!

Cut the meat into tender strips. Put them in a suitable bowl together with the fish sauce as well as the sugar. Marinate for one hour, turning occasionally to the other side.

Saute ginger and onion in oil until soft. Move to the edge of the pan and roast the meat over high heat, stirring throughout, until it takes on color. Add the mushrooms and heat.

Stir the clear soup with the corn flour. Add to skillet and stir until thickened. Add oyster sauce and half of the scallions. Stir in and heat over low heat.

Serve with cooked long grain rice.

!! Do not steam the meat or it will become tough. If the frying pan is not large or hot enough, fry in portions.
