For the beef marrow spread, place the marrow bones in ice-cold water for half an hour.

Squeeze the beef marrow from the bones and rinse with cold water, carefully removing any bone splinters that may be present. Mash the marrow well on a plate with a fork.

Wash and finely chop the chives. Peel and finely chop the onion and garlic cloves.

Heat the clarified butter in a frying pan and fry the onion and garlic pieces until translucent. Add the beef marrow and stir-fry over medium heat for 5 minutes and allow to cool.

Add the chives to the cooled beef marrow. Season the spread with salt and pepper and add a little chili powder to taste.

Toast the slices of brown bread and serve the beef marrow spread together with the still warm bread.
