For the beef ribs plate, the ribs should be cut into 5-6 cm thick pieces. Then cut the meat diagonally at intervals of about 8 mm, let it stand in cold water for about 30 minutes and then wash thoroughly.

Prepare a marinade from the garlic, spring onion, soy sauce, ground sesame seeds and sesame oil, pepper and red wine.

Add the washed rib pieces to half of the marinade and refrigerate for at least an hour, but preferably a day. Save the other half of the marinade.

Cut the carrots and white radish into slices about 3 inches thick.

Peel the chestnuts.

Clean and roast the ginkgo seeds in an oiled pan until they lose their green color. Rub the shells with a napkin.

Pour the cold water to the ribs in the marinade and cook covered over high heat for 20 minutes, removing the foam and oil from the surface.

Add the other half of the marinade and the peeled vegetables to a pot and cook over low heat for about 20 minutes.

Add the ginkgo seeds and cook everything for another 10 minutes.

Arrange the meat and vegetables on a platter and sprinkle everything with finely chopped ginkgo seeds.
