For the beef roulades, fry the onion in oil. Beat the beef cutlets, season with salt and pepper, spread with hot mustard and cover with bacon.

Put half pickles, half carrot and bell pepper strips on top, roll up and fasten with toothpicks. Add to the onions and fry all around.

For the vegetables, clean and cut the root vegetables and add them. Fry the tomato paste and pour in the soup so that everything is covered. Simmer for about 1 1/2 hours.

Remove the roulades, blend well with a hand blender and remove the toothpicks. Add the roulades back to the sauce, let them simmer for a short time and serve.
