For the beef spread, first simmer leg meat in plenty of water with soup vegetables, bouillon cubes, bay leaf and peppercorns for about 40 minutes in pressure cooker or 1 1/2 hours in pot until tender.

Allow meat to cool, cut into small cubes and mix with beef broth. Then chop onion to mix with mayonnaise and fold in leg meat. Season to taste and refrigerate. The longer the beef spread can stand, the better it tastes.
