For the beef ragout, heat olive oil in a pan and fry the diced bacon in it.

Now remove the bacon and fry the beef, cut into ragout pieces, turning continuously. Add the coarsely chopped onions and the crushed garlic cloves and brown lightly.

If you want the sauce to be creamy, dust a little flour over it. Stir well. Extinguish with white wine. Add the tomatoes. Perfume with rosemary. Season with salt and pepper.

Cover and simmer on low heat for at least 120 minutes, until the meat is very tender. Now add the bacon again, cook for another five minutes. Sprinkle with parsley before serving.
