Beef Tartar Marinated in Balsamic Vinegar with Brown Bread Chips and Dijon Mustard Pickles

Finely chop the beef fillet. Finely chop chervil and green onion and mix in. Marinate with balsamic vinegar, salt, pepper, chopped green chili and sweet chili sauce. Slice the brown bread thinly, brush with olive oil and toast briefly in the oven. Meanwhile, cut the cucumbers into thin strips (“cucumber spaghetti”) with a julienne slicer and marinate with Dijon mustard, sherry vinegar and salt. Form the Dijon mustard cucumbers into balls with an ice cream scoop and place in the center of the plate. Rub the toasted bread with garlic and place on top of the cucumber balls. Place tartar on top of the bread chips, also in ball form. Decorate and serve.
