Divide the tomatoes horizontally into 3 slices. Season the beef fillet slices with salt and pepper. Heat some olive oil in a pan and fry the slices of beef fillet in it on each side according to the desired cooking level (rare or medium). Remove and keep warm. Fry the slices of melanzani and tomato and the whole young onions in olive oil in the pan as well. Season with salt, pepper, oregano and chopped garlic. Now alternate tomatoes, melanzani and beef on a plate, piling them up to form a turret. Place a fried young onion on top of each. Garnish as desired with marinated arugula or herbs.side dish recommendation: crusty baguette.
