Have fun preparing this mushroom dish!

Cut the meat about five mm slices and marinate with soy sauce for about five minutes.

Fry the drained meat in hot oil on both sides. Then add ginger, garlic and mushrooms and steam. Add the spring onions and fry briefly. Finally, stir in the bean sprouts, fry for about half a minute, extinguish with mirin and a little bit of soy sauce and steep for two to three minutes.

It goes well with basmati long grain rice.

(*) Tip: if you have a lot of ginger peels, make syrup from them: put the peels on with water and sugar, make five min, then infuse, filter.
