Instructions:

Peel ginger and chop finely. Clean spring onions and cut diagonally into pieces of about 2.5 cm. Peel and finely chop the garlic clove. Remove fat from meat and cut diagonally to the fiber into strips (or slices) about 5 cm long.

Heat oil (I) in a wok or possibly in a large frying pan. Add half of the meat to the frying pan and stir-fry until brown (3-5 min), remove. Roast any meat left over in oil (Ii) in the same way, remove and add to the other meat.

Mix soy sauce, water, cornstarch, oil (Iv), oyster sauce and chili sauce well in a baking bowl.

Heat oil (Iii) strongly in a wok or frying pan. Add onions, ginger, garlic and cashew and stir-fry for 1 minute.

Add starch flour mixture and meat and heat, stirring throughout, until sauce boils and thickens. Garnish and bring to table on the spot.
