For the beetroot soup, put the beet in water and boil for about 30 minutes, or 40 minutes if the beet is very large.

Peel the beets, cut them into small pieces and add them to the beef soup. Heat the beef broth and add finely chopped carrot, beetroot, leek and celery to the soup as well as the diced soup meat.

Let the soup boil for about 10 more minutes and season to taste. Add the corn kernels and serve the beet soup with a blob of sour cream.
