For the beet soup, chop the onion into small cubes. Peel the beet and also cut into small cubes.

Heat the butter and sauté the onion, add the beet and sauté briefly. Pour in the vegetable soup and simmer on low heat for about 20 minutes until the beets are soft.

Puree everything well, add the sour cream and bring to the boil briefly. Season with powdered sugar, cayenne pepper, salt and pepper and serve the beet soup.
