For the beet soup, wash beet and boil unpeeled in water. After about 35 minutes, poke the beets with a toothpick. When it goes in easily, the beets are done cooking.

It is best to peel the cooked beets with rubber gloves, as they will stain heavily. Peel the carrots, cut into cubes, dice the onion.

Melt the butter in a soup pot, add the finely diced onion and carrot cubes and fry lightly. Pour in about 700 ml of water, add soup powder, salt and pepper.

Crush the caraway seeds a little in the mortar and add to the soup. Add the peeled, chopped beet and cook everything together for about 15 minutes.

Then puree in the Thermomix. Season to taste and serve decorated with sage leaves and sour cream.
