Instructions:

Soften the beet with the shallots and potato slices in the beef broth. Blend finely in a hand blender, season with salt, pepper and vinegar. Add the sour cream, bring to the boil and serve.

Place 1 tablespoon of sour cream on each unit, grate fresh horseradish over the top and sprinkle with lemon zest.
