For the beetroot waffles, puree all the ingredients for the waffle batter in a blender.
For the pesto, wash the basil and shake dry. Peel and finely chop the garlic. Blend the garlic together with the basil, pine nuts, lemon juice and olive oil with a hand blender to make a pesto. Season to taste with salt and pepper.
Preheat a waffle iron and grease it. Bake the waffles one at a time, opening the iron only when the edges are lightly browned.
Garnish with cilantro greens and serve the beetroot waffles together with the pesto.
