Instructions:

Wash the peppers. For 2 of the red peppers, cut a round around the stem and carefully twist so that the “head” comes off. Cut or tap out the seeds and set aside. Cut the other peppers first into strips, then into cubes.

Cut the flesh of the mangoes from the pit, cut down the peel sparingly, and place in the stand mixer. Squeeze the lemon and add to the blender with a few pieces of red bell pepper, the cherry tomatoes and some of the mint. Blend everything well and pour into the red peppers.

Chop the parsley and remaining mint, mix with the bell pepper pieces and arrange on a plate. Put the peppers on top and garnish the bell pepper salad with herbs.
