For the chocolate glaze, heat the cream in a saucepan and soak the gelatin according to package directions (usually 10 minutes in cold water). Once the cream is hot (not boiling), add the chocolate.

Stir until the chocolate is completely melted. Now remove the pot from the heat, stir in the well squeezed gelatin and let the chocolate cool for about 5 minutes.

Now stir in the cold butter, one cube at a time, and let it set again for about 5 minutes, stirring occasionally.

Since the butter is cold, the chocolate glaze cools quickly and thus has the perfect consistency.
