Bifteki with Lentils and French Fries

Instructions:

Soak the bread in water, mix the minced meat with the peeled and finely diced shallot and garlic.

Season with salt, pepper and herbs and add the egg and the softened, squeezed bread. Now knead the whole thing well.

Put 1/4 of the mince mixture on a piece of cling film and press it flat. Then place 1/4 of the feta cheese on the bottom half of the mixture and fold the other side over it using the cling film. Shape the bifteki so that it has an oblong-cornered shape and the cheese is completely enclosed in the meat mixture. Fry the bifteki on both sides in a frying pan with oil until evenly brown.

Preparation of the lentils Soak the lentils in water for one night. A day later, make the lentils in fresh, salted water for about 25 min and subsequently drain in a colander.

Cut the bacon and the shallots into cubes. Put the bacon cubes in a casserole dish, sauté the shallots until soft and add the lentils. Deglaze with the Riesling and cook the lentils for another 2 minutes, stirring continuously.

Preparation of the French fries Remove the peel from the potatoes and cut them into sticks of approx.

1/2 cm X 1/2 cm. Soak the sticks for about 10 minutes and dry them with kitchen paper. Next, fry the potato sticks in oil.
