For the black and white snails, prepare both doughs. To do this, crumble the butter with the flour and knead in each case the remaining ingredients. Work as quickly as possible until a smooth dough is formed. Wrap the 2 doughs separately in plastic wrap and let rest in a cool place for at least half an hour.

Roll out both doughs on a floured surface into rectangles of equal size. Brush the dark slab with the lightly beaten egg white and place the light slab on top, pressing lightly.

Then roll both sheets tightly from the long side and wrap in plastic wrap. Place the dough roll in the refrigerator for 1 hour. Then cut slices about 1 cm wide from the roll and place them on a baking tray lined with baking paper.

Preheat the oven to 170°. Bake the black and white snails between 10 and 12 minutes, not too dark.
