Blood Orange Salad with Hot Goat Cheese

Peel blood oranges, removing the white skin exactly. Cut oranges diagonally into narrow slices, remove seeds if necessary.

Halve onions lengthwise and cut into narrow wedges. Whisk 8 tbsp oil with vinegar, salt and pepper. Add oranges and onions and let them soak for half an hour. Mix remaining oil with pistachios and breadcrumbs to a paste, spread paste evenly on cheeses. Place cheese on a baking sheet lined with parchment paper and gratinate under the heated broiler for 2-3 min. Arrange leaf lettuce on a platter, place the gratinated cheeses on top and bring to the table on the spot.

Tip: Be sure to buy young crottin. The older ones are sharper and not to everyone’s liking.
