Boil water with the bones, bay spice and cleaned greens, put in the boiled beef, season with salt and pepper and simmer with closed lid at mild heat for about 90 minutes.

In between, skim the clear soup with a slotted spoon. In the last 15 minutes of cooking, add the carrot and the leek. When meat and vegetables are tender, remove and cool. Strain the clear soup and perhaps degrease it. Until this is done, prepare the 1st course the day before.

The finish on the feast day then takes another 15 min: heat the clear soup, squeeze the veal sausage meat out of its skin and place it by the teaspoonful as dumplings in the clear soup and let it cook for 5-8 min.

5 minutes before the end of the time, add the meat cut into strips and the chopped vegetables and heat. After seasoning, sprinkle with parsley in portions.
