Instructions:

Cut the washed, cleaned spinach a few times.

Finely chop the spring onions and sauté in a little oil until light. Add the spinach and steam until it collapses. Season vigorously with salt as well as pepper and steam until soft. Remove from heat and let cool.

For the glaze, whisk all ingredients together and season.

Preheat the oven to 180 °C and grease a suitable baking dish.

Now place half of the pastry sheets in the baking dish, pouring a little of the glaze between each sheet.

Add spinach and cover again with pastry sheets and egg glaze. Finish with a layer of egg glaze.

Bake the börek with spinach filling in a hot oven for about 30 minutes until golden.
