Wash and clean the chicory and sprinkle with lemon juice. Slice carrots, celery and shallots, sauté with butter in an ovenproof dish, add spices and mix. Place the chicory stems on the vegetable bed, pour in the chicken stock and braise in the oven at 180 °C for about 50 minutes.
