Rinse the cucumbers well, remove the skin and cut in half lengthwise. Remove the seeds with a spoon and cut the flesh into finger-width pieces. Season the cucumber pieces heartily with salt, drizzle with a little vinegar and leave to marinate for about thirty minutes.

Leave the bacon fat in a frying pan, add the onion and fry it, then take it out. In the remaining fat, briefly sweat the tomato pieces, then dust with flour, mix well, sweat very briefly. Add the cucumber pieces with the extracted juice and beef broth, season with sugar and simmer on low heat for about five minutes.

Stir in the whipped cream and simmer for another five minutes. Season to taste with salt and freshly ground pepper. Sprinkle with freshly chopped dill.

Serve the cucumbers sprinkled with the bacon and onion mixture.

Serve with potatoes, and perhaps some meatballs….
