For the brandy cherries, carefully wash the cherries or sour cherries, remove stems as desired, but do not damage the fruit. Place the cherries in the jar.

Boil sugar with water, skim and let cool. Season to taste with vanilla bean, cinnamon or cloves.

Mix sugar solution with brandy and pour over fruit. Close the jar and leave it at the window (without direct sun) for about 3 months.
