For the bread soup, cut the onion into rings and fry in oil. Slice the leek, garlic and parsley root, add and fry briefly.

Pour in the vegetable soup. Simmer for about 10 minutes. Slice bread, cut in half and toast on both sides in oil.

Place in an ovenproof pan, spread some vegetables on top, grate cheese on top. Spread slices of bread on top again.

Pour vegetable soup over it and again spread grated cheese on bread slices. Sprinkle with chopped parsley.

Bake at 180 °C convection oven for about 20 minutes.
