For this bread, of course, you don’t necessarily have to pickle the tomatoes yourself. But if you make the effort, you can be sure to achieve the corresponding spicy note that suits this recipe. The aroma of thyme also develops at high temperatures, so it is ideal for baking.

At the beginning, put in the tomatoes. To do this, layer the dried tomatoes in a jar of the appropriate size. Cut the chili peppers in half, remove the stalks, seeds and septum. Remove the skin from the garlic cloves and cut them in half. Place the thyme, chilies, garlic and basil on top of the tomatoes. Pour olive oil until the ingredients are completely covered. Cover and refrigerate for three days.

For the bread, sift the flour into a large enough bowl and make a well in the center. Crumble the yeast into it, let it melt with the lukewarm milk, stir in a little flour from the rim. Dust the base with flour and cover the bowl with a dishcloth. Place in a warm place, protected from drafts and let the dampfl rise until the surface shows cracks, this takes about 20 min.
