For the bread with sourdough from all ingredients knead a rather soft yeast dough, with the machine would be advantageous. Let rest for about 30 minutes. Knead again with rye flour and place in a floured proofing basket.

Dust with rye flour, cover again and let rest for half an hour until cracks appear on the surface. Preheat the oven to 250 °C, place a container of water on the bottom of the oven to create steam.

Turn the bread out onto a warm tray, cut it with a sharp knife and put it into the preheated oven. After 10 minutes, turn the temperature down to 185°C, remove the water and bake for 30-35 minutes.

Test the bread with sourdough and let it cool on a wire rack.
