Bread with Sweet Potatoes – Pan De Camote

Instructions:

Lasts about 2 1/2 hours. Work you need in about 1 hour.

Soften sweet potatoes like cooked, peeled potatoes for about 25 minutes. Drain, rinse, peel, mash into puree and cool.

Mix yeast, 1 tsp sugar and water and let rest for 10 min.

Combine flour, baking powder and yeast and stir for about 5 min until bubbles form. Cover and let rest for 10 min. Melt butter.

Add eggs, butter, milk, mashed potatoes, remaining sugar and salt to dough form. Knead dough with hands until smooth, perhaps adding more flour, rest 1 hour until about doubled in volume.

Using a tablespoon, cut into 30 portions, roll into balls on flour, press flat and place on greased baking sheets. Mix egg yolk and milk, brush breads with it.

Put the first baking tray into the cold oven. Bake the breads at 180 °C (convection oven, 160 °C, gas mark 3) for approx. 40 minutes until golden brown.

Breads on each following baking tray need approx. half an hour. Serve warm or just cooled flat.
