Instructions:

In red wine, sugar and a little water, the pears are cooked until soft. The pears must be covered by the liquid. When they are soft, take them out, cut them into quarters and remove the stalk and pips. Boil the stock until syrupy and add the pears again.

Whisk the cream until stiff, spread it on the plates and place the cooled pear slices on top.

Bake for 15 minutes, a little more if necessary.
