Instructions:

Clean broccoli with stem end. Blanch undivided. Drain well.

Mix flour with salt, egg yolks, melted butter and white wine until smooth. Whip egg whites until firm, fold in.

Dip the roses in the batter up to the stem and bake in hot fat until crispy.

Serve sprinkled with grated cheese.
