For the broccoli pancakes, first prepare broccoli: To do this, wash broccoli and divide into florets. Cook briefly in boiling water until tender. Strain and mash well with a potato masher, setting aside some florets for garnish to taste.

Chop onion into small cubes and fry in a pan until golden brown. Knead broccoli, yolk, flour, onion, salt, parsley, pepper and breadcrumbs to a compact mass. Then form patties and coat in breadcrumbs.

Fry the pancakes in hot fat in portions and on both sides for about 5 minutes. Keep warm.

For the soy noodles, boil the noodles in salted water until soft. Then strain and mix in soy sauce.

Serve the broccoli fritters with soy noodles and broccoli florets.
