For the burger buns, first mix flour, sugar, salt and yeast in a bowl. Whisk milk, egg and yolk and add. Knead everything into a smooth dough.

Then add the butter and continue kneading until the dough is nice and smooth. Let rise in a warm place for about 1 1/2 hours.

Flour a work surface, form a roll from the dough, cut off eight pieces and shape into rolls. Place on a baking sheet lined with parchment paper. Let rise again for an hour. When you press on the dough and it returns to its original position, the rolls are ready to bake.

Whisk egg white with a little water and brush the rolls with it. Bake at 190 °C for about a quarter of an hour until the buns are golden brown.

Allow the burger buns to cool, cut in half and top as desired.
