For the kohlrabi stew, rinse the meat, pat dry and cut into 1.5 cm cubes.

Heat butter in a saucepan, add the meat and fry for about 10 minutes on all sides. Add beef broth and water and season with salt. Let it simmer for about 45 minutes.

In the meantime, peel kohlrabi and cut into small pieces. Peel potato and cut into pieces as well. Add peas, kohlrabi and potato pieces to the meat 25 minutes before the end of the cooking time.

Whisk cornstarch with a little cold water. Bind the stew with it.

Dice bacon and peeled onion. Heat butter in a frying pan and fry bacon for 3 minutes. Add onion and fry for 5 minutes until golden brown. Stir it into the stew.

Finally, garnish the kohlrabi stew with finely chopped chives.
