Defrost the 6 pieces of herb butter again, then whisk in the cream flakes (available at ‘bofrost’), 1 tsp. curry, 1 egg yolk, 1 tsp. paprika “edelsüss”, 1 pinch each of marjoram, thyme and rosemary and the one tbsp. cognac, if possible ‘Remy Martin Vsop’.

Cafe de Paris butter is excellent for gratinating short fried meat and fish.

Our tip: If you like to cook with fresh herbs, it is best to get kitchen herbs in pots – so you always have everything ready!
