For the Canelés Bordelais, heat the milk at low temperature. With the scraped pulp of the vanilla bean and the butter, mix the flour and sugar and stir the flour-sugar mixture with 1/3 of the vanilla milk until smooth. Then add the rest of the vanilla milk and let it cool a bit. Whisk the egg with the egg yolk and add it to the batter. Add a dash of rum and let the liquid dough rest overnight.

Preheat the oven to 180°C (not convection). Spread a thin layer of melted butter on the canelés moulds. Now fill the dough into the ramekins up to 1 cm below the rim. Let the canelés bake for 70-80 minutes. Remove the canelés from the oven, let them cool briefly and turn them out of the mold.
