For the Carinthian Buchteln, warm the milk with butter in a saucepan on the hob. Knead the flour with yeast, egg yolk, lemon zest, honey and the milk-butter mixture for 10 minutes in a food processor. Knead the dough until it comes away from the side of the bowl.

Let the well kneaded dough rise in a steamer at 40°C for 30 minutes.

Now place the dough on a floured work surface and knead again by hand, forming a long snake. Cut 20 pieces of the same size from this.

Flatten each piece and fill with powid. Dip the formed booklets in melted butter and position them evenly in the universal roaster.

Cover with a kitchen towel and let rise again for 30 minutes.
