Instructions:

Pasta dishes are always a good idea!

Salt, flour, egg and liquid mix well in a baking bowl and knead into a smooth, not too firm dough (good 20 min).

Be sure to rest the dough for a few hours, preferably overnight, with the lid closed.

1. quark and potato filling: make the potatoes, remove the skin while hot and squeeze them. Crumble in the curd cheese. Finely chop the onions, leek and garlic respectively, fry in butter, finely chop the kitchen herbs. knead everything together well. Form balls of the desired size.

2. quark rolls: cut the rolls into small cubes. Fry finely chopped onions in butter, add the bread, toast both lightly. Pour enough milk over the rolls so that they are slightly moistened. Add all the other ingredients, knead everything together very well, form balls.

3. paps: rinse the paps (= millet) very well, soften in salted water until tender (approx. 15 min). Pour through a sieve, drain well. Further preparation as for filling no. 1.

These fillings are used to make noodles. They are larded with butter or gram fat and served with green or cabbage salad.
