Peel and finely dice the onion. Peel and rinse the carrots. Cut 1/5 of the carrots into tender strips. Roughly dice the rest. Heat fat in a saucepan and sauté onion and carrot cubes in it. Season with curry and coriander. Douse with clear soup, bring to the boil and simmer for about 15 minutes. Drain apricots, reserving juice. Set aside 12 fruit halves. Add remaining apricots and juice to soup about 5 minutes before end of preparation. Rinse chives and cut into rolls. Finely grind the apricot soup. Add apricot juice and carrot sticks, heat briefly repeatedly and season.

Serve the carrot-apricot soup with apricot halves and chives.

Tip: As an alternative to the fresh chives, you can also use the freeze-dried ones.
