Remove peel from carrots and celery and cut into coarse pieces. Peel, quarter and core the apple. Grate carrots, celery and apple very finely and place in a large enough bowl. Remove peel from ginger, grate finely and add to vegetable form. 2 tbsp juice of one lemon with oil and 1 pinch of sugar to the vegetables form and mix. Stir sour milk with remaining juice of one lemon and sugar. Pluck lemon balm leaves and cut into thin strips. Pour some sauce into serving glasses, spread raw vegetables evenly on top and sprinkle with lemon balm.
