Instructions:

Melt butter in a saucepan, sauté onion and garlic until soft (about 5 min). Sprinkle with flour, stir extensively. Add clear soup, vegetables and coriander powder, bring to a boil.

Gently simmer for 30-40 min (until carrots are soft). Puree, then fold in the yogurt and cilantro greens. Gently reheat until soup is hot (but don’t let it bubble!). Serve. Garnish with cilantro leaves, if desired.

Tip: Use plain or light yogurt as needed!
